Glutamate is a key compound in cellular metabolism. It is the most abundant excitatory neurotransmitter in the vertebrate nervous system. It also serves as the precursor for the synthesis of the inhibitory GABA in GABA-ergic neurons. This reaction is catalyzed by glutamate decarboxylase (GAD), which is most abundant in the cerebellum and pancreas.
It is often used as a food additive and flavour enhancer in the form of its salt, known as monosodium glutamate (MSG). A glutamic acid derivative, poly-γ-benzyl-L-glutamate (PBLG), is often used as an alignment medium to control the scale of the dipolar interactions observed. L-Glutamic acid is used in cell culture as a component of MEM non-essential amino acids solution. L-Glutamic acid has been used as a nitrogen source in the culture of Aspergillus fumigatus NRRL 2436 for fumagillin production. The competitive roles of L-glutamic acid and L-aspartic acid in the growth of Oenococcus oeni NCFB 1707 have been studied.
Clear, Colorless Solution (10% in 2N HCl). Soluble in water (8.64 g/L at room temperature; 140 g/L in boiling water); insoluble in methanol, ethanol, ether, acetone, cold glacial acetic acid and common neutral solvents.
